It’s snack attack time! Since I was a kid i’ve always been a snacker. I love all kinds, no matter if they’re sweet or salty. The problem is that when looking for snacks i’m sometimes drawn to what’s easy and convenient at the grocery store, which as a result can be deceivingly unhealthy. As I was food shopping the other day and looking at an overpriced box of crackers (that contained probably only 30 crackers), I had the realization that I could prep my own snacks at home and be totally satisfied. I could make something that is delicious and just as convenient as buying it at the store to fill me up and take care of my snack craving. With this realization, I found my new love for these Apple “Cookies.”
I love a bit of texture with any of my food, and this snack is no exception. You have the great bite from the apple and the smooth texture of the peanut butter on top. And you can’t forget the toppings! This is where you get to go wild and crazy. I topped my “Cookies” with shredded coconut, granola, pecans and strawberries. As I was eating my snack I kept thinking of more and more combinations for the next time! I could enjoy this for breakfast or as a boost to get me through my afternoon at work. This delicious snack is healthy and will turn you into the ultimate snacker too!
Ingredients
1-2 Apples (I Used Granny Smith)
Peanut butter
Cinnamon
Topping Options: granola, coconut flakes, crushed pecans, chocolate chips, honey, strawberries etc.
Directions
1.Beginning at the top of your apple, cut apple slices that are about ¼ -½ an inch thick*
2.Spread peanut butter on the face of each apple and sprinkle with desired toppings. Eat and enjoy!
*If slices aren’t working for you, you can cut apple wedges instead!
