Check out these soft cinnamony Blueberry Oat Cookies! Berry season is definitely upon us, and I don’t know about you, but i’m adding them to everything! Blueberries are so sweet this time of year, and incorporating them into desserts just adds a delicious natural sweetness! These cookies are perfect for breakfast, or maybe an afternoon snack? I don’t judge!

Total time: 40 minutes
Yields: 2 dozen cookies
Ingredients
¾ cup butter
1 cup brown sugar
½ cup sugar
2 eggs
Dash of vanilla
1 ¼ cup flour
1 teaspoon baking soda
¾ teaspoon cinnamon
½ teaspoon salt
2 ¾ cup oats
1 ½ cup fresh blueberries
Glaze:
½ cup powdered sugar
1 tablespoon milk
Directions
1.Preheat your oven to 350 degrees, and line your baking sheets with parchment paper.
2. In a stand mixer, begin creaming your butter and sugars until light and fluffy. Add in your eggs, one at a time making sure each is incorporated. Next, add in the vanilla and mix well.
3. In a separate bowl mix together your flour, salt, cinnamon and baking soda. Slowly incorporate your dry ingredients into your butter mixture. After, mix in your oats, ensuring they are all distributed. Remove your bowl from the mixer, and add your blueberries in, mixing them by hand to ensure they are all incorporated.
4.Using a cookie scoop, place your cookie dough onto your prepared baking sheets, and bake for 9-11 minutes until the edges look lightly browned, and cookies are set. Allow to cool on the baking sheet for about 10 minutes before transferring them to a wire rack.
5.Mix your glaze ingredients together, and drizzle over cooled cookies!
