Baking Lesson of the day: Sometimes the most bizarre ingredients can yield the most delicious surprises. One of the things I love most about baking is not just creating something tasty, but feeling surprised that ingredients have the ability to transform something as basic into something fantastic.
My bizarre ingredient? Tahini!
Now, i’m sure you can tell from the incredibly long title of this treat that there is a lot going on in this cookie! But, the most important one to remember here, is the shining star of this cookie. It's Tahini! Tahini is an ingredient I use in a lot of my cooking, and i’ve been noticing some of my favorite bloggers incorporate it into their own baked goods. I’ll admit, at first I was a skeptic. But I needed to find out what all the fuss was about. All I can say is, I was not disappointed!
Tahini adds a soft, chewy texture to cookies, and a caramel-nutty flavor too! As I was about to pop these cookies in the oven, I decided to add a sprinkling of sea salt to the top to bump up the sweet and salty flavor! Because come on, who doesn’t love a little salty with their sweet?
Prep Time: 10 minutes
Total Time: 1 hour
Yields: 2 dozen cookies
Ingredients
½ cup unsalted butter
½ cup tahini
½ cup sugar
½ cup brown sugar
1 teaspoon vanilla
1 egg
1 egg yolk
1 ½ cups flour
1 teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ cup oats
Chocolate chunks*
Sea salt for sprinkling; optional
Directions
1.Preheat your oven to 350 degrees, and line your baking sheets with parchment paper.
2.begin by beating your butter, tahini, and sugars in a stand mixer, until light and fluffy.
3. Once fluffy, add in your vanilla, and one egg at a time. While this mixture is incorporating, mix together your flour, salt, baking powder and baking soda.
4. Add the dry mixture to your wet, and allow to incorporate. Once all mixed together, add in your oats, followed by your chocolate chunks. After the mixture is fully incorporated, use a cookie scoop and place cookie dough on your baking sheets. Sprinkle the tops with a little bit of sea salt, and gently press the dough down a bit. Place the cookie sheet in the fridge for about 10-15 minutes to firm up.
5.Once chilled, bake for 10-12 minutes, or until the edges are golden brown. Once finished, allow to cool, eat, and enjoy!
*I don’t like to give a specific amount for chocolate chunks, since everyone should have the freedom to add in as much as they want!
