Well, today was my 2nd snow day people! It just so happens that when i'm stuck inside, and 20 feet from my kitchen I just begin to crave something sweet. Since this is my 2nd consecutive day at home, I try to remember that i've been sitting on my couch for almost 48 hours, and I should probably take it down a notch with the junk food!
When this craving began, I was in need of a healthy alternative to satiate that sweet tooth of mine. So, I blended up a batch of my healthy ice cream! Yeah, you heard me. Healthy Ice cream people! This recipe has a banana base, and can be changed and added to for your liking. Today, I blended a bit of cinnamon to the mixture, and topped it off with my Homemade Granola. I'm kind of a texture-junkie with my food, so the crunch from the nuts and oats in the granola was absolutely delicious with the creaminess of the ice cream.

Prep Time: 5 minutes + 40 minute freezer time
Yields: 1 cup ice cream
Ingredients
2 bananas sliced, and frozen
⅛ teaspoon cinnamon*
A dash of vanilla extract
Toppings (I used Homemade Granola, but you can top this whatever you want!)
Directions
1. In a food processor or blender, blend the bananas until they are a creamy ice cream texture**
2.Add in cinnamon and continue blending
3.Place into a freezer-safe dish and let the mixture firm up in the freezer for at least 40 minutes
4. Once the mixture is firm, scoop into a bowl, add your desired topping and enjoy!
*I used cinnamon for this mixture, but you can add in anything you want! Other delicious combinations would be 1 tablespoon of cocoa powder, 1 tablespoon of peanut butter and more!
**If the mixture isn’t coming together, add about ¼ cup of milk until it blends together and becomes smooth.
