Since i've been stuck at home due to some serious snow conditions outside, I had some time to stock my pantry and freezer with all kinds of delicious treats! This morning I put together a batch of delicious Homemade Granola! This granola can be added to yogurt, ice cream, cereal, or even as just a snack! It's extremely versatile and can be changed or added to depending on your liking. Hope you enjoy!
Prep time: 25 minutes
Yields: 2 cups granola
Ingredients
2 cups old fashioned oats; toasted
1 cup chopped nuts; toasted (I used pecans & slivered almonds)
1 teaspoon kosher salt
¼ teaspoon cinnamon
¼ cup olive oil
¼ cup honey
1 tablespoon molasses
¼ cup dried fruit (I used dried cranberries)
¼ cup coconut flakes
Additional mix-ins: chocolate chips, pepitas, sunflower seeds etc)
Directions
1. Preheat oven to 350 degrees and spray a sheet pan with nonstick cooking spray
2. In a large mixing bowl, combine toasted oats, toasted chopped nuts, coconut flakes, and dried fruit. Once mixed, add in honey, molasses, olive oil, salt and cinnamon.
3. Spread the mixture evenly on a sheet pan and place in oven for 10 minutes. Take pan out, and move the granola around a bit to ensure the entire mixture gets toasted through. Place back in oven for another 5-10 minutes until whole mixture is toasted.
4. Remove mixture from oven and let cool before breaking the mixture into chunks. Store in an airtight container!
