Apple Spice Cake with Granola Crunch



Sending warm wishes to all my friends out there as we head into Rosh Hashana! Not going to lie, but this Apple Spice Cake with Granola has me thinking all kinds of sweet and thankful thoughts as we begin this new year. This cake wasn’t just inspired by the holiday though. As the season of fall approaches I just can’t be tamed with sharing my favorite fall inspired desserts such as this cake! Stay tuned for more my friends, and have a happy new year!



Prep Time: 10 minutes

Total Time: 30 minutes

Yields: 8-10 slices


Ingredients

1 cup oil

¾ cup applesauce

1 ½ cups brown sugar

3 eggs

1 ½ teaspoon vanilla

2 ½ cup flour

1 teaspoon baking soda

1 ½ teaspoon baking powder

1 ½ teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon ginger

¼ teaspoon cloves

½ heaping teaspoon salt

1 cups chopped apples


Granola Ingredients

6 cups of old fashioned oats

3 tablespoons butter

¼ cup oil

1 teaspoon salt

1 cup brown sugar

¼ cup honey

2 tablespoon molasses

1 teaspoon vanilla

½ cup chopped pecans

½ cup chopped almonds

½ cup sunflower seeds


Vanilla Frosting Ingredients

1 cup butter/margarine

4 cups powdered sugar

1-2 tablespoon milk

2 teaspoon vanilla

Pinch of salt


Directions

1. Preheat your oven to 350 degrees. Spray a cookie sheet with nonstick spray and set aside. In a bowl mix together oats, butter, oil and salt. Spread evenly on your cookie sheet and place in the oven for 10 minutes or until toasted brown. While your oats are toasting, combine brown sugar, honey and molasses in a saucepan on medium heat. Stir the mixture until just bubbling and add in your vanilla. Add your nuts to a large bowl, along with your toasted oats. Pour over your sugar mixture making sure everything is coated. Spread evenly on a large cookie sheet coated in nonstick spray or foil and bake for about 25 minutes. When finished, allow the granola to cool before breaking into pieces.

Preheat oven to 350 degrees and spray two round baking tins your with non-stick spray

2. In a stand mixer combine sugar and oil and mix until incorporated. Add in applesauce, vanilla and eggs one at a time. Mix until all incorporated.

3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Slowly begin to incorporate into the wet mixture without over mixing.

4.Fold in your chopped apples and pour evenly into greased tins

5.Bake cakes for 25 minutes, or until a toothpick comes out clean

6. While the cakes are baking, combine the butter, powdered sugar and milk in a stand mixer fitted with the paddle attachment. Once the powdered sugar is incorporated, add in the vanilla and salt.

7. When cakes are baked and cooled, place the first cake on a cake stand and layer with frosting and then crumbled granola. Place the second cake on top, and frost the top and sides of the cake. Decorate with more granola, or any other desired topping. Refrigerate for at least an hour before slicing and enjoying!
