Cake Truffles



I think my favorite part about this recipe is that it's one of the easiest things i've ever made, yet the word "truffle" in the title makes it sound fancy! Also, theres something so festive about cake truffles or cake pops, that people automatically gravitate to, and I love that. Maybe it's because they're small and adorable? Or maybe because they're rich and delicious? Eh who knows.


One of my biggest pet peeves is wasting and getting rid of perfectly good food. Whenever i'm baking and decorating cakes, I've gotten into the habit of freezing any of my cake scraps or trimmings. It's perfectly good cake, and can be used for decorating or snacking! Recently, I used my favorite red velvet cake scraps to create these Cake Truffles! Just mix the scraps with your favorite and easiest frosting, dip the rolled cake truffles in chocolate, and let them harden! I mean really, how easy is that?


Ingredients

3-4 cups of cake scraps

6 tablespoons unsalted butter

¾ cup powdered sugar

½ cup cocoa powder

2-3 tablespoons heavy cream

Dash of vanilla

Pinch of salt

Dipping chocolate or chocolate melted with about 1 tablespoon coconut oil

Sprinkles


Note: The list above include ingredients for the chocolate frosting I used in my cake truffles. You do not have to use this one, and can certainly use whatever frosting you like!


Directions

1.Start by breaking up your cake scraps until you have small crumbs.

2. In a stand mixer beat your butter for about 3 minutes. While waiting for the butter, sift your sugar and cocoa powder. Add this to your butter, alternating with the heavy cream until you’ve added it all. Add your vanilla and salt, and continue allowing the mixture to come together until all incorporated.

3. Once your frosting is finished, add your cake scraps and mix until everything comes together.*

4.Once finished, use a cookie scoop and place cake balls on a parchment lined baking sheet and flash freeze for an hour.

5. After your hour is up, melt your chocolate, and dip each ball into the chocolate, making sure to tap off any excess chocolate. Place the truffles on your lined baking sheet and sprinkle with your favorite sprinkles or toppings.

6. Place in the fridge for 1-2 hours to allow the truffles to set before eating and enjoying!


*You are more than welcome to add more cake scraps to the mixture if you do not think there is enough. You want the mixture to be moist from the frosting, but you also want enough cake in there!
