Chocolate Peppermint Whoopie Pies



Prep Time: 15 Minutes

Yields: 1.5 dozen


Ingredients

½ cup melted butter

1 cup brown sugar

1 teaspoon baking powder

½ teaspoon baking soda

¾ teaspoon salt

½ teaspoon espresso powder

1 teaspoon vanilla

1 egg

½ cup cocoa powder

2 ⅓ cup flour

1 cup milk


Vanilla Frosting

1 cup softened butter

4 cups powdered sugar

¼ teaspoon salt

½ teaspoon peppermint extract or vanilla extract

¼ cup milk

Crushed candy canes


Directions

1.Preheat your oven to 350 degrees, and line your baking sheet with parchment paper

2.In a stand mixer, mix your butter, sugar, baking powder, baking soda, salt, vanilla and espresso powder until incorporated. After, add your egg and mix until smooth.

3.Add your cocoa powder and then alternate between your flour and milk until you have a smooth batter

4.Using a ⅛ or ¼ of a cup, drop the dough onto your baking sheet, making sure to leave room between each. If using ⅛ of a cup, bake for 8 minutes. If using ¼ of a cup, bake for 11-12 minutes, before allowing to cook on a wire rack.

5.While whoopie pies are baking, make your frosting. Whip your butter in a stand mixer, and slowly incorporate your powdered sugar. Once mixed, add your salt, extract and milk. Mix until you have a light and fluffy frosting.

6.After whoopie pies are cooled, spread or pipe frosting onto one side and sandwich with a second one. After, sprinkle crushed candy canes around the side and press so they stick!
