I think adding cereal to any crumble is my new weakness. As if my obsession with snacking on cereal wasn't enough, I topped off my favorite banana cake recipe with a delicious mixture of brown sugar, butter and Cinnamon Toast Crunch goodness. The crunch from the cereal adds great texture to the smooth banana cake, and only reinforces my belief that cereal really does needed to be added to our favorite treats!
Cake Ingredients
2 smushed bananas
1 ½ cup water
1 ½ cup brown sugar
½ vegetable oil
2 eggs
1 teaspoon vanilla
1 ¾ cup flour
1 teaspoon baking soda
¾ teaspoon salt
¼ teaspoon cinnamon
Cinnamon Toast Crunch Crumble
1 cup flour
½ cup brown sugar
1 teaspoon cinnamon
¼ teaspoon salt
⅓ cup butter
1 ¼ cups Cinnamon Toast Crunch Cereal
Directions
1.Preheat oven to 325 degrees, and line a baking tin with parchment paper
2. In a stand mixer blend the oil and sugar together. Add in your smushed bananas, and mix together before adding in your eggs and vanilla.
3. In a separate bowl mix together your flour, baking soda, salt and cinnamon. Add the dry ingredients into the wet, and mix until fully incorporated. Add the batter to your prepared baking dish.
4. In a separate bowl begin to make your crumble. Mix together your flour, sugar, cinnamon and salt. Add in your butter in cubes, and use your fingers to blend the mixture together until you have a rough crumbly mixture. Add in your crushed Cinnamon Toast Crunch cereal and give it a good mix. Sprinkle the crumble on top of your banana cake batter, and place in the oven for 45-50 minutes or until a toothpick comes out clean. Slice, and enjoy!
