Hi there fellow bakers! Over the past week, I have had doughnuts on my mind! I mean, who doesn’t,right? I can’t explain why they’ve been on my mind, but I just knew that I needed to perfect my recipe ASAP to fill this sudden void in my life. I’ve always been a doughnut lover, specifically the classic glazed ones. When putting the finishing touches on this recipe, I also found that I preferred having this treat baked rather than fried. You still get that satisfying doughnut experience of biting into a moist, sweet, and delicious treat without feeling weighed down by it being fried.
After a few days of doughnut dreaming, and not being able to get into the kitchen to make them, we happened to make plans to visit my family today for dinner. When making the plans, I was tasked with bringing a dessert. There was only one criteria I was tasked with, and that was chocolate! With this newfound information, doughnuts were happening, and they were happening now! It seemed that my constant daydreaming about my chocolatey moist doughnuts were meant to become a reality. After baking, I coated half of these doughnuts in a delicious glaze, and the other half in powdered sugar for a touch of sweetness. Make these for your next family get together, party, or just to share with a friend (or yourself!).
Prep Time: 30-40 minutes
Yields: a dozen & a half doughnuts
Ingredients
1 ¼ cups flour
¼ cup cocoa powder
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon coffee or espresso powder
¾ cups sugar
1 egg
1 teaspoon vanilla
2 tablespoons butter melted
½ cup sour cream
⅓ cup milk
Glaze
1 cup powdered sugar
1 ½ tablespoons milk
½ teaspoon vanilla extract
Directions
Preheat your oven to 350 degrees, and spray a doughnut pan with nonstick spray
In a stand mixer, mix together sugar, egg, vanilla, butter, sour cream and milk
Whisk together dry ingredients in a separate bowl and add to your wet ones. (note: you do not want to over-mix the batter, so add in the dry ingredients and stop once immediately incorporated)
Add your batter to the doughnut pan, and bake for 10 minutes*
Once doughnuts are baked, take them out of the pan and allow them to fully cool before adding your glaze.
*When transferring the batter into my pan, I placed the batter into a zip-top disposable bag, snipped the end and piped it into the doughnut pan.
**When making these, I used all non-dairy products such as soy milk and non-dairy sour cream.
