Blondie Ice Cream Bars



I believe spring is upon us! The weather is warmer, we’re all in happier moods, and my students are bouncing off the walls. So yes, spring has arrived. One of my all time favorite warm-weather memories from my childhood was when the ice cream truck would make an appearance on my block. I’d be hanging outside with my friends, and the second we heard the music, we had this conditioned response to sprint inside and beg our parents for money. You would think It was the race of our lives to make it back in time before the truck drove away. No one wanted to be THAT kid who had to run down the street to catch the truck before it turned onto the next street. This is such a simple memory, yet it’s something that still makes me smile today!


In honor of feeling nostalgic and excited for our warm (ish) weather, I have the ultimate sweet treat! Blondie Ice Cream Bars. Yes you heard. These were my own spin on the classic ice cream cookie sandwiches that I used to stuff my face with when the ice cream truck rolled around. It’s so simple, yet so addicting, and I loved re-creating (and eating) them!



Prep Time: 10 minutes

Total Time: 6 hours

Yields: 7-8 sandwiches


Ingredients

½ cup butter

1 ½ cups brown sugar 2 eggs, lightly beaten 1 teaspoon vanilla 1 ½ cups flour ½ teaspoon baking powder ½ teaspoon salt 1 cup chocolate chips

¼ cup peanut butter; melted in microwave

Chocolate ice cream


Directions

1.Preheat your oven to 350 degrees, and line two 8 inch baking pans with parchment paper.

2. In a stand mixer, beat your butter and brown sugar until light and fluffy. Add in your eggs and vanilla, scraping down the bowl to make sure it’s all incorporated.

3.Mix your dry ingredients together, and slowly add them into your wet mixture. Stir to combine, until all incorporated. Add in your chocolate chips before splitting the batter between your 2 baking dishes. Place in the oven for 18-20 minutes, or until a toothpick comes out clean.

4.Once blondies are baked, allow them to cool completely. While cooling, let your ice cream come to a spreadable consistency. Once blondies are cooled, spread melted peanut butter over the surface of one of the blondies. Allow this to harden for a few minutes while your ice cream continues to come to temperature.

5.Once ready, add dollops of ice cream on top of the peanut butter, and spread as best as you can to the edges. Take your other blondie bar and place on top of ice cream. Place in the freezer and allow the bars to set for 4-5 hours. Once ready to serve, remove from pan and slice into squares. Eat and enjoy!
