Peanut Butter & Jelly Bars



Oh yes, you read the title correctly. We have some peanut butter and jelly action happening here in the most delicious of ways! One of my favorite ways if you will, and that's in...cookie.blondie.bar.form!


I’ve been happily busy while beginning my summer vacation this week and got distracted in sharing this fantastic recipe. I baked this up for some friends a few weeks ago, and it honestly just transported me back to childhood! It had me asking myself some hard questions! Like, why I never have peanut butter and jelly sandwiches anymore?!


These PB & J Bars are like stupid good! They can be enjoyed as the dessert with any meal, for breakfast, or a midnight snack perhaps? If you’re feeling wild and crazy you can even warm these up a bit! The peanut butter and jelly in these bars has such an ooey and gooey texture. And come on, how pretty are the swirls?! Don’t forget the chopped peanuts sprinkled on top for a bit of texture! With the craziness of the end of school, and now the madness of catching up in life, it’s good to be back sharing some dessert love!



Ingredients

½ cup melted butter

¼ cup peanut butter

1 cup brown sugar

1 egg

2 teaspoon vanilla

1 ¼ cup flour

¼ teaspoon salt


Swirl/Topping

⅓ cup peanut butter

⅓ cup of your favorite jam*

⅓ cup chopped peanuts


Directions

1.Preheat oven to 350 degrees and line your baking pan with parchment paper. In a microwave safe bowl melt the butter for about 40 seconds, and then add the peanut butter and melt the mixture for another 40 seconds. Mix together until all incorporated, and add to a stand mixer.

2.Add the sugar and mix until incorporated. Next, add in the egg and vanilla. Scrape down the sides if necessary before adding in the flour and salt. After mixing, pour the batter into the prepared baking pan.

3.Using a ½ a teaspoon, drop dollops of jelly onto the top of the batter, and do the same with the peanut butter. Using a toothpick begin to swirl the jam and peanut butter.** Add the chopped peanuts on top, sprinkling all over.

4. Place bars in the oven for 22-25 minutes, using a toothpick to test if they're done. Allow blondies to cool and set at room temperature for about 40 minutes before slicing and enjoying!


*I used raspberry jam since this is my favorite flavor and one I keep in my pantry!

**Do not over swirl the jam and peanut butter or else you will get a giant blob and not a beautiful swirl!
