Peppermint Hot Cocoa Brownies

Well friends, it’s frigid outside. Yup, not just cold, but frigid. All I want to be doing right now is curling up on my couch with some

hot chocolate, and binge watch Hallmark holiday movies, or a bit of TLC (Depending on my mood). There’s just something about the cold weather that instantly makes me crave warm desserts and peppermint flavors. I combined two of my favorite holiday flavors into these DELICIOUS holiday treats. That’s right, Peppermint Hot Cocoa Brownies. With these brownies, you get all the feels, vibes and of course flavors you would normally get from a hot, delicious peppermint mocha. Check them out, they may be your new favorite holiday treat!

Total time: 40-50 minutes

Yields: 1 dozen squares


Brownie Ingredients

1 cup of butter, melted

¾ cup cocoa powder

1 ½ cups sugar

4 eggs

2 teaspoon vanilla

1 cup flour

½ teaspoon salt

12 ounces of chocolate chips


Peppermint Frosting

1 cup unsalted softened butter

1 ¼ cup powdered sugar

1 teaspoon vanilla

1 ½ teaspoon peppermint extract

7 ounces marshmallow creme

Crushed candy canes

Directions

1.Preheat oven to 350 degrees and line a baking dish with parchment paper (note: I used an 8x8 tin to get thick brownies)

2.Begin the brownie batter by melting the butter in a microwavable safe bowl. Stir in cocoa powder, then sugar. Add in the eggs one at a time, mixing thoroughly between each. Stir in the vanilla, flour, and salt. Once fully combined, stir in the chocolate chips.

3.Pour brownie batter into your prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean.

4. While your brownies are baking, begin your frosting by combining the butter and powdered sugar. Beat the two together until combined before adding in your marshmallow creme and beating until the mixture becomes light and fluffy. Add in your vanilla and peppermint extract, and beat for a few more minutes until You have your desired consistency.

5.Spread the frosting over cooled brownies, and top with crushed candy canes!
