Brookie Cookies



Hello friends! As you may notice from the Brookie Cookie recipe and pictures below, I had a moment of indecisiveness recently while baking. Did I want chocolate chip cookies? Or did I want some type of brownie situation?! Answer: BOTH. When it comes to treating yourself I believe that there’s no reason why we should settle. Have both if you can! So shout out to the indecisive dessert lovers out there! This is the ideal treat for the undecided, and you will thank that indecisive side of yours when you take your first bite of this cookie! Because there’s nothing wrong with a combination of chocolate chip cookies smushed with the deliciousness of a brownie type dessert!


Have I mentioned that these are also adorable looking? I love this combination in the form of cookies. But have no fear, Brookies can also be found in other dessert forms such as bars, cupcakes and more. The options are endless, so get baking whiskers!


Prep Time: 20 minutes

Total Time: 1 hour

Yields: 3 dozen cookies


Ingredients

Brownie cookie batter

10 tablespoons softened margarine/butter

⅔ cup brown sugar

⅔ cup sugar

1 egg

1 egg yolk

1 teaspoon vanilla

1 ¼ cup+3 tablespoon flour

½ cup cocoa powder

1 teaspoon baking soda

½ teaspoon salt

2 teaspoon coffee granules

½ cup white chocolate chips


Chocolate chip cookie batter

10 tablespoons softened margarine/butter

⅔ cup brown sugar

⅔ cup sugar

1 egg

1 egg yolk

1 teaspoon vanilla

2 cups +2 tablespoon flour

1 teaspoon baking soda

½ teaspoon salt

½ cup chocolate chips


Directions

1. Begin by making your Brownie cookie batter. In a stand mixer, beat your butter/margarine until light and fluffy. Add in your sugars and continue to mix until incorporated and light in color. Add your egg, egg yolk and vanilla, scraping down the sides as necessary.

2. In a separate bowl, mix your flour, cocoa powder, salt, coffee granules and baking soda. Slowly begin incorporating into the mixer and mix a few times until incorporated. Add in your white chocolate chips before covering the bowl and placing it in the fridge to chill for at least 30 minutes.

3.While brownie batter is chilling, preheat your oven to 350 degrees, and line your baking sheets with parchment paper or silicone baking mats. To begin the chocolate chip cookie batter, beat your butter/margarine until light and fluffy. Add in your sugars and continue to mix until incorporated and light in color. Add your egg, egg yolk and vanilla, scraping down the sides as necessary. In a separate bowl, mix your flour, salt, and baking soda. Slowly begin incorporating into the batter and mix a few times until it's all combined. Add in your chocolate chips and mix.

4. Once brownie batter has chilled for a bit, begin by scooping a teaspoon of each dough onto baking sheets. Once you have finished, take a teaspoon of brownie batter and a teaspoon of chocolate chip cookie batter and press them together, smoothing over the sides if necessary. Place on your baking sheet in preparation for baking. Once you have finished creating your cookie balls, bake in the oven for 8-10 minutes*. Allow to cool on the baking sheet for about 2 minutes before transporting to a cooling rack. Eat and enjoy!


*You want the cookies to appear slightly under baked so that they do not dry out.
