Chocolate Chip Banana Tart



Happy Sunday friends! I’ve got some major deliciousness here for you today! A few years ago my family ordered a cake for my grandfathers birthday, but didn’t really know what we were going to get. This funky cake showed up with a chocolate chip cookie crust, banana cream, and chocolate everywhere! When it originally arrived our confusion was evident, but after tasting it, we couldn’t stop talking about it. Two years later we still talk about “that cake!” This weekend my family came to visit, and I wanted to try and recreate that crazy cake we can’t stop talking about. I attempted my own version of the cake in tart form and decided on a chocolate chip cookie tart crust, banana curd layer topped off with chocolate ganache. I mean really...what’s wrong with that?! Prep Time: 10 minutes

Total Time: 1.5 hours

Yields: 8-10 slices


Ingredients

Cookie crust

½ cup butter/margarine

¼ cup+2 tablespoon brown sugar

¼ cup sugar

1 egg

½ teaspoon vanilla

1 ¼ cup flour

½ teaspoon baking soda

¼ teaspoon salt

Mini chocolate chips


Banana Curd

4 bananas

4 eggs

2 tablespoon lemon juice

1 ½ cup sugar

Pinch of salt


Chocolate Ganache

¾ cup heavy cream

¾ cup chocolate chips or chopped chocolate


Directions

1.Preheat your oven to 350 degrees and spray a tart pan with nonstick cooking spray.

2. In a stand mixer beat your butter/margarine and sugars until light and fluffy. Add in your egg and vanilla, while making sure to scrape down the sides of the bowl. In a separate bowl, mix together your flour, baking soda and salt before adding it to the rest of your batter. Once all mixed together, add in your chocolate chips before pressing into your tart pan. Bake the tart crust for 15-17 minutes, or until firm and a toothpick comes out clean.

3.While the crust is baking, combine all the banana curd ingredients in a food processor and blend together. Pour into a saucepan over medium heat and stir for about 10 minutes until the mixture thickens and coats the back of the spoon. Allow the curd to cool for at least an hour before spreading into your cooled tart crust.

4. In the microwave or on the stove bring your heavy cream to a low boil to prepare for your chocolate ganache. Once boiling, pour over chocolate, and allow to sit for about 10 minutes before mixing together. Pour over the banana curd before placing in the refrigerator to firm up and chill. Slice and enjoy!
