Spiced Apple Pie



I know that the holiday season is upon us, and the mildly cool fall weather has quickly turned to cold. But I’m just not ready to give up my fall desserts yet! I’m not feeling like I got my full fall fix, so here’s a deliciously spiced apple pie that was inspired by food blogger Molly Yeh! There’s also something incredibly satisfying about making a homemade apple pie, and filling your home with the warm spices and baked apples. In my opinion, it’s all about the comfort food, friends. So as the weather gets colder, head to your kitchen and warm things up a bit with some of your most favorite comforting treats!



Prep Time: 30 minutes

Total Time: 1 ½ hours

Yields: 8-10 slices


Apple Filling

7-8 Sliced apples

1 cup brown sugar

Juice of 1 lemon

1 teaspoon cinnamon

½ tablespoon ground ginger

¼ teaspoon cloves

¼ teaspoon nutmeg

½ teaspoon salt

3 Tablespoon cornstarch

Dash of vanilla

Pie Crust

2 ½ cups flour

1 tablespoon sugar

Generous dash of salt

1 cup salted butter; cubed

6 tablespoons ice cold water (more if needed)

1 tablespoon apple cider vinegar


Directions

1.Mix all your apple filling ingredients and let the mixture sit for about 10 minutes to allow all the juices from the apples mix with the spices.

2.Begin your pie crust by adding your flour, salt and sugar to a food processor and pulse until combined. Add your butter and pulse until pea size crumbs begin to form. Combine your vinegar and ice water before adding into the processor and pulsing the pie dough. Pour the dough onto a floured surface, and divide in half.Take one of the halves and cut that in half so you are left with three pieces. Wrap each in plastic wrap before placing in the fridge to chill for at least 30 minutes.

3.Preheat your oven to 400 degrees. Once your dough has chilled. Take your larger piece of dough and roll it out to form a large disk. Transfer this to your pie plate and chill for a few minutes. While you are waiting take your other pieces of dough begin slicing your other pieces into even strips to create your lattice crust.* Once the crust has chilled, fill with your apple mixture, juices and all. Add your strips of dough to create your lattice crust. Trim any excess dough, and pinch the sides together before brushing the dough with an egg, and sprinkling some turbinado sugar. Place in the freezer for 15 minutes, before baking in the oven for 40-45 minutes. Serve with whipped cream or ice cream!


*If you don’t care to make a lattice crust, just roll out the dough into a disk and cover the pie with that. Slit a few holes in the middle to allow air to release!
