Move over regular old s’mores, there’s a new dessert in town! Don’t get me wrong, I love a good classic s’more. What I love about this recipe though, is that you can get your fix, no campfire needed!
S’mores are such a quintessential summer treat, and this decadent pie will put a little pep in your s’more step. The thick graham cracker crust, gooey brownie middle, and soft marshmallow meringue create the ultimate s’more experience that will have you and your friends baking this up year round!

Ingredients
Crust
10 sheets graham crackers;
6 tablespoons melted butter
⅓ cup sugar
Brownie Filling
½ cup butter
6 tablespoons cocoa powder
1 cup sugar
2 eggs
1 teaspoon vanilla
½ cup flour
¼ teaspoon salt
Marshmallow Meringue Topping
8 egg whites
1 ¾ cup sugar
½ teaspoon salt
¼ teaspoon cream of tartar
½ teaspoon vanilla
Directions
1.Preheat your oven to 350 degrees. Begin your crust by smashing or pulverizing your graham crackers into crumbs. Mix with the melted butter and sugar. Press the mixture into a pie dish, and set aside.
2. To begin your brownie mixture. Melt your margarine, and add to your cocoa powder. Mix in the sugar, and add the eggs one at a time. After, stir in your vanilla, flour and salt. Pour mixture over your graham cracker crust, and spread evenly without disturbing your crust. Bake for 25-30 minutes, or until a toothpick comes out clean.
3. While the pie is baking, begin your topping. Add water to a pot and allow it to come to a simmer on the stove. While you’re waiting, add your egg whites, sugar, salt and cream of tartar to the bowl of a stand mixer. Place on top of the simmering pot of water, ensuring that the bottom of your bowl isn’t getting wet. Stir the mixture constantly, making sure to also scrape down the sides. Mix until the meringue seems thin and foamy (7-10 minutes). After, remove the bowl from the heat and attach to your stand mixer. With a whisk attachment in place, begin mixing the meringue on low, and work up to high speed. Beat until mixture is glossy and has stiff peaks. Beat in the vanilla, and then add on top of your cooled brownie.
4. After spooning the meringue on to your pie, place under your broiler, and watch the pie closely. You will begin to see the meringue browning after a minute, so keep an eye on it until you have your desired coloring! Remove pie from the oven, and allow it to cool before slicing and enjoying!
