Happy (almost) Mothers Day weekend everyone! When you think about the real meaning of the day, it’s to show our moms how much we appreciate and value them, right? But how do we really display this? Yes, presents and extravagant gestures are totally appropriate sometimes. But Mother’s Day has an honest simplicity and an undeniable message that deserves to be recognized and celebrated; and that message is that MOMS TOTALLY ROCK! Who gave these women actual superhero abilities?! I mean come on, they can literally do anything!
To celebrate these women in our lives my husband and I are hosting Mother’s Day brunch for all our special moms. We wanted a no frills day with our families where we can spend time and thank them for putting up with us! Since our lives clearly revolve around food, we figured brunch was a great way to get the moms together!
In preparation for the holiday I’m making a whole bunch of treats that I know everyone will love. These Chocolate Chunk Crumb Muffins are decadent and absolutely delicious. Muffins are one of those baked goods that is reminiscent of living at home, so I couldn’t think of a better treat to add to my brunch menu.
So while you’re thinking about how to show some lovin’, look no further. Whisk up a batch of these muffins and I guarantee they will ensure you some serious brownie
points (HA! Get it?)
Prep Time: 10 minutes
Total Time: 25-30 minutes
Yields: A dozen muffins
Ingredients
½ cup vegetable oil
½ cup sugar
½ cup apple sauce
1 teaspoon vanilla
1 ¾ cups Flour
⅔ cup cocoa powder
2 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cup buttermilk
2 large eggs
Chocolate chunks*
Crumble:
¼ cup melted butter
⅓ cup dark brown sugar
⅓ cup cocoa powder
About ⅔ cup flour
Directions
1.Preheat oven to 425 degrees and line a muffin tin with cupcake liners. In a bowl, hand mix your oil and sugar until incorporated. Add in eggs 1 at a time, and then vanilla.
2. In a separate, larger bowl, mix together your flour, baking powder, baking soda, cocoa powder and salt.
3.Pour your wet ingredients into your dry, and hand mix until almost incorporated. Add in your buttermilk and gently fold the ingredients together before adding in your chocolate chunks.
4.For your crumble, combine the dry ingredients, and then the melted butter. With your hands, mix together until the mixture resembles coarse crumbs.
4.Fill your cupcake tin with your batter about ¾ way full, and top each generously with your crumble. Place in your 425 degree preheated oven for 4 minutes, and then lower the temperature to 350 for another 10-15 minutes.
5. Check your cupcakes with a toothpick, and remove to enjoy!
*The amount of chocolate chunks can be as little or as much as you want!
