Chocolatey Peanut Butter Bars

Happy Wednesday everyone! When you find yourself in that midweek slump what better way to pull through than some chocolatey peanut butter bars?! These bars are the easiest recipe around and are filled with rich peanut butter and chocolate deliciousness! Let's be honest, when you find yourself tired and cranky from those midweek blues, what better way to put a smile on that face than having your favorite grocery store peanut buttery chocolate candy bar?

Am I right? No? Just me? WELL, if you’re looking for that necessary sweet treat then look no further, I’ve got the one for you! You can use this recipe to create little ball shapes, or make them into bars like i’ve done below! These are quick, easy and will most definitely be snatched up! So get baking!

Baking time: 10 minutes, plus 2 hours for chilling

Yields: 9-12 bars

Recipe

½ cup butter or margarine; melted

1 cup crushed graham cracker crumbs (note: if you don’t have graham crackers use any other similar cookie such as animal crackers, teddy grahams, gluten free cookies etc)

1 cup powdered sugar

¾ cup+2 tablespoons of peanut butter*

1 cup chocolate chips

¼ teaspoon salt

Instructions

  1. Line an 8x8 square inch pan with aluminum foil. This allows you to easily take the bars out after being chilled and cut them into squares.

  2. In a bowl, mix together melted butter, graham cracker crumbs, and powdered sugar. Once combined, add in ¾ cup peanut butter and salt. Pour into prepared baking dish.

  3. In a microwave safe bowl, place your chocolate chips and 2 tablespoons of PB. Melt in the microwave, stirring every 30 seconds to prevent burning!

  4. Once mixture is melted and smooth, pour over the peanut butter mixture. Finally, place in the fridge to chill for 2 hours, or until fully hardened.

Want a little extra crunch in your bite? Feel free to add chopped peanuts to the top of the melted chocolate before placing in the fridge. It will be even more DE-LISH

* Feel free to use crunchy peanut butter if you like a little extra texture!

** I like to take these bars out of the fridge 10 minutes before cutting them to let them soften a bit. It will allow you to cut them into neat little squares!

*** If making this recipe into balls, roll the dough using about a tablespoon of dough. Pop them on a baking sheet and chill for our 40 minutes. Once chilled, toss them into the melted chocolate, and place into the fridge to chill for another 1-2 hours until they have hardened and set.
