Happy National Chocolate Chip Cookie Day! May 15th is clearly a very important day to remember (and eat) our favorite classic cookie! The classic chocolate chip cookie is LITERALLY one of my favorite treats. I love a nice soft, chewy cookie, and these deliver! Sometimes i’ll change them up a bit with the add-ins, or i’ll even use them to make ice cream sandwiches! Bake these up today and celebrate the holiday right!
Prep Time: 5-7 minutes
Total Time: 15-20 minutes
Yields: about 4 dozen cookies
Ingredients
1 cup oil
1 cup brown sugar
½ cup sugar
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
2 eggs
2 tablespoon cornstarch
2 ½ cups flour
1 ½ -2 cups chocolate chips
Directions
1.Preheat your oven to 375 degrees and line your baking sheets with parchment paper.
2. In a stand mixer, begin to mix your oil and sugars until fully incorporated. Add in your eggs, one at a time and the vanilla.
3. Next, add in your baking soda, salt and cornstarch and allow to come together. Reduce your mixture to low and slowly add in your flour. Once combined add in your chocolate chips.
4.Using a cookie scoop, place cookie dough on baking sheet a few inches apart and bake for 8-9 minutes. Once finished, allow cookies to cool on the tray for 5 minutes before transferring to a wire rack. Enjoy!
