Cup O' Joe Cookies



Happy Sunday everyone! Do you smell that? That’s the incredible smell of coffee brewing in the A.M! Sunday’s are all about kicking back and relaxing with a rich cup of coffee, right? I’m a coffee addict and find my addiction not just in drinking coffee, but with coffee flavored desserts too.


There’s nothing wrong with appeasing that special addiction with some sweet baked goods, to go along with your steaming mug of coffee. So for all those coffee lovers out there, this recipe is for you! For all those out there who don’t enjoy the dark and delicious drink, I feel for you. BUT, even if you’re not into drinking coffee, these cookies will still be a favorite of yours.


This recipe is everything you want in a chocolate chip cookie with the added bonus of an incredible mocha flavor from the coffee. You’ll want these cookies to become a breakfast staple in your home, so get going whiskers!


Prep Time: 50 minutes

Yields: 18 cookies


½ cup butter

¾ cup Brown sugar

1 egg

½ teaspoon vanilla

1 ½ cup flour

1 teaspoon salt

½ teaspoon baking soda

1 teaspoon cornstarch

1 cup chocolate chips

⅛ cup instant coffee


Directions

  1. Preheat oven to 350 degrees, and line your baking sheet with a silicone baking mat or parchment paper

  2. Cream your butter in the mixer, and then add in sugar and beat until light and fluffy

  3. Add in your vanilla and egg and mix until incorporated. Scrape down the sides to allow it all come together

  4. In a separate bowl whisk together your flour, salt, baking soda and cornstarch. Slowly incorporate into the mixer and mix until incorporated.

  5. Add in your coffee and chocolate chips and mix until dispersed.

  6. Using a cookie scoop, drop cookies onto baking sheet, and bake for 9 minutes

  7. Once cookies are baked, allow them to fully cool and set up before digging in!
