Fruity Pebble Blondies



One of the reasons I love baking is having the freedom to come up with recipes that are inspired from the simplest foods and ideas that inspire me. I love having the freedom to be creative and have fun with different flavors and combinations. One of the places I recently found inspiration was from my local supermarket. I knew I wanted to develop something new, and wanted inspiration from everyday ingredients in the store. I happen to LOVE cereal as a snack, and decided to browse the cereal aisle to see if anything stuck out to me. The Fruity Pebbles caught my eye, and I loved how much they resembled sprinkles with some added fruity flavor. I bought the cereal unclear on how I would use it, but knew this would be the star ingredient of my next recipe.


After brainstorming at home, I decided on these Fruity Pebble Blondies. I let the child in me run wild with this recipe by adding the white chocolate and marshmallows too. I wanted these to look like a beautiful and enticing dessert, but one that would put a bit of sunshine and rainbows in everyones day when they saw them. When I opened the box of cereal, the sugary fruity smell transported me back to my childhood. When tasting these bars I wanted my friends and family to be transported and reminisce their inner-child when enjoying this playful treat.


The cereal pieces in these bars create a fun pop of color, and the marshmallows do this magical crazy thing when baking! They rise to the top, get toasty and gooey, and then spread on the face of the bars to create a sweet layer. The white chocolate drizzle and sprinkling of Fruity Pebbles on the top are so playful and will definitely make you feel like a kid again.


Prep Time: 10 minutes

Total Prep Time: 50-60 minutes

Yields: 1 dozen bars


Ingredients

1 cup margarine/butter

1 cup white chocolate

1 ½ cups sugar

3 eggs

1 teaspoon vanilla

½ teaspoon salt

2 cups flour

⅔ cup Fruity Pebble Cereal

½ cup mini marshmallows



Directions

1.Preheat your oven to 350 degrees and line an 8 inch square pan with parchment paper. In a microwave safe bowl, place margarine and ½ cup of white chocolate and microwave in increments of 15 seconds until the mixture is melted together.

2.Once the mixture is melted, add to your stand mixer along with the sugar and mix until incorporated. Add in your eggs one at a time, and the vanilla. Next, add in your flour and salt before mixing a few times. Add in your cereal, marshmallows and remaining half a cup of white chocolate chips. Pour into your prepared baking tin and bake blondies for 35-40 minutes, until a toothpick comes out clean.

3. Once blondies are cooled and baked, drizzle white chocolate over the the blondies and sprinkle extra cereal over the top. Once hardened, slice and enjoy!
