Grandma's Hamantaschen

This weekend I had the opportunity to travel to Philly and visit my family. There are many things I have to be fortunate for in my life, and one is how close I am with my parents, siblings, grandparents, cousins and more. We’re one of those large and wacky families who are rigid with our family traditions.


Whenever the holiday of Purim comes around, my husband and I make a point of heading to Philly to make sure we can bake Hamantaschen cookies with my grandma. It’s been a tradition for as long as I can remember, and it’s something I feel can't be missed out on.


Last night, my grandmother and I went through our yearly routine, and once again baked up a batch of her famous Hamantaschen. We always find it a challenge to have them come out beautiful and neat, but at the end of the day it’s the significance of the tradition, and of course how they taste!

Prep Time: 2 hours

Yields: 2 dozen, depending on size


Ingredients

3 eggs

3 ½ Cups flour

2 Teaspoon baking powder

½ Cup oil

1 Cup sugar

Dash of orange juice

Chosen Filling (note: I used cherry pie filling, Lemon pie filling & chocolate chips)


Directions

  1. Preheat oven to 350 degrees. Follwing this, beat your eggs, and then add sugar

  2. Add sifted flour followed by baking powder, oil and the juice

  3. Lightly knead the dough before wrapping in plastic wrap and chilling in the fridge for an hour

  4. Once dough has chilled, flour your surface and begin to roll out the dough at about 1/4 an inch thick

  5. Use a cup or any other circular object to cut out your circles

  6. Place circles on a baking sheet lined with parchment paper, or sprayed with baking spray

  7. Place your filling in the middle of the circle, and begin to fold up the sides to create the triangular shape

  8. Lightly brush with an egg wash and bake in the oven for 10-15 minutes, or until lightly browned

  9. Let cookies cool on a wire baking rack before digging in!
