Lemon Blondie Bars



GUYS, I have found some actual sunshine and it’s in the form of a delicious Lemon Blondie Bar! That’s right, some serious sunshine and lemony goodness has come your way.

While I do wish I had the ability to capture some sunshine and bake them into my desserts, this bar comes pretty close. When I think of the warm weather, I automatically think of fresh sweet desserts. Ones that make you feel refreshed after eating as opposed to the more rich and treats.

These Lemon Blondie Bars have a punch of lemon flavor, and the sweet lemony glaze on top makes these irresistible! The glaze has these adorable little flecks of lemon zest in them that make you want to dive in and devour the whole pan! You can mix things up and recreate this dessert using other citrus such as limes or even oranges. Honestly, use what you have lying around! I typically keep a large amount of lemons in the house, so when they start to near the end of their citrus lives, I like to use them in other inventive ways. Head to your kitchen and get zesting bakers! You have some sunshine to scrounge up!


Prep Time: 10 minutes

Total Time: 50 minutes

Yields:1-2 dozen bars


Ingredients

½ cup vegetable oil

1 cup sugar

Zest from 2 lemons

2 eggs

½ teaspoon vanilla

1 tablespoon sour cream

½ teaspoon salt

1 ½ cups flour

Juice from 1 ½ lemons


Glaze

2 cups powdered sugar

Juice from 1-1 ½ lemons

Zest from 1 lemon

½ teaspoon vanilla

Water (if needed to loosen things up)


Directions

1.Preheat your oven to 350 degrees and line a 9x9 inch pan with parchment paper

2. In a stand mixer, add your sugar and lemon zest. Mix the 2 together and allow the lemon to infuse the sugar. Add in your oil and mix until incorporated. Add in your 2 eggs, vanilla and sour cream.

3.Begin to incorporate your dry ingredients into the batter, scraping down the sides of the bowl when necessary. Add in your lemon juice and mix well. Pour into prepared baking pan and bake for 25-30 minutes

4. Once blondies are finished baking, allow them to cool and come to room temperature. In a separate bowl, combine your ingredients for the glaze, and pour over the blondies. Allow blondies to sit and for the glaze to firm up before slicing and enjoying!
