Morning everyone! I don’t know about you, but this warm weather has me feeling some major spring fever! Having been already bitten by the spring bug, I find myself thinking about more light and refreshing dishes, rather than the more warm and comforting ones from the cold winter months. I’m ready for spring, and I want it now! My spring fever has definitely inspired some of my recent baking. One flavor I’ve been inspired by are lemons! They’re incredibly refreshing and brighten up any dish! This refreshing flavor was the inspiration for my recent Lemon Cookie recipe. This cookie is to die for! It has a buttery, soft texture that just melts in your mouth. The lemon flavor adds an instant pop of sunshine goodness that will keep you wanting more. I mean come on, who doesn’t love sunshine?! These cookies are perfect for for the upcoming warm weather, and can be served at BBQ’s, picnics, bridal showers and more! Prep Time: 10 minutes
Total time:15 minutes + 9-11 baking minutes
Yields: 1 dozen cookies
Ingredients
½ cup margarine/butter
1 cup sugar
2 egg
⅓ cup sour cream
1 teaspoon vanilla
1 ½ tablespoon lemon juice
1 tablespoon lemon zest
1 ¾ cups flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
Glaze Ingredients
½ cup white sugar
½ cup water
1 teaspoon lemon zest
Pinch of salt
Directions
1.Preheat your oven to 350 degrees, and line baking sheets with parchment paper or silicone baking mats
2. In a stand mixer, beat the margarine/butter and the sugar until light and fluffy in color. Add in the eggs one at a time and mix well. After scraping down the sides of the bowl, add in the vanilla and the sour cream. Add in the lemon zest and mix until combined.
3. In a separate bowl whisk together your flour, baking powder, baking soda and salt. Begin to slowly incorporate, alternating between the lemon juice and dry mixture.
4. Using a cookie scoop, place cookie dough on baking sheets and bake for 9-11 minutes until set.
5. While cookies are baking, place a saucepan over medium heat. Add your sugar and water and salt. Bring the mixture to a simmer and stir. Once the sugar has dissolved, stir a few times and allow the mixture to simmer for another 2-3 minutes until it begins to thicken. Take the glaze off the heat and mix in ¾ teaspoon of the lemon zest and let the mixture steep for about 10 minutes. The mixture will continue cooling and thicken up!
6. When cookies are complete, remove from the oven and allow them to cool on a cooling rack before pouring the glaze over, and sprinkling on some lemon zest!
