Muddy Buddy Cookies


Goodbye to the days of traditional snacking! No longer are we bound to the classic, typical snacks. Rather, we are seeing the trend of “Snackification” playing a role in how we snack, and what we snack on. The lines have blurred in relation to rigid mealtimes and snacking times. Even more so to what we choose to eat during these snacking times. More than ever we are eating and snacking when we want, and how we want.


Let’s be honest, snacks play a BIG role in our lives! Not only are snacks a part of our daily food consumption, they play a more diverse role by combining foods we never would have thought to combine in the past. As we all know, I am quite the snacker. I find myself following this Snackification food trend, and i’m getting more creative with what I put together to satisfy my hunger AND sweet tooth.


Following this trend, I have come up with the ultimate snack! The snack of all snacks if you will. MUDDY. BUDDY. COOKIES. Muddy Buddies, Puppy Chow, whatever you know them as are the indulgent crunchy cereal snack covered in chocolate, peanut butter, and powdered sugar. This iconic snack is literally crack in a snack bag. Once you get started, you will either need to finish the bag in one sitting, or you will have to lock it up somewhere.


Since I am the ultimate snacker, I combined my love for cookies and my love for Muddy Buddies to create this ridiculous recipe. The base is a soft peanut butter cookie, coated with a layer of chocolate- peanut butter mixture. Stop there? No way. Pieces of Chex Cereal are crushed up and sprinkled on top, followed by a sprinkling of powdered sugar. Long story short, you need these. Get baking!


Prep Time: 10 minutes

Total Time: 30 Minutes+Chilling time

Yields: 1.5 dozen cookies


Ingredients

½ cup margarine

½ cup peanut butter

½ cup sugar

½ cup brown sugar

1 egg

½ teaspoon vanilla

1 ⅓ cup flour

¾ teaspoon salt

½ teaspoon baking soda

½ cup crushed chex cereal

¼ cup powdered sugar


Chocolate Peanut Butter Coating

1 cup chocolate chips

¼ cup margarine

¼ cup peanut butter


Directions

1.Preheat your oven to 350 degrees, and line your baking sheets with parchment paper or silicone baking mats.

2. In a stand mixer, beat your margarine until light and fluffy. Add in your sugar and brown sugar and beat for about a minute before adding in your peanut butter. Beat the mixture until fluffy and lighter in color. Add in your egg and vanilla, and mix until incorporated. Scrape down the sides of your bowl to get all that goodness in there!

3. In a separate bowl, mix your flour, salt and baking soda. Slowly begin to incorporate the mixture into the batter. Mix until incorporated, making sure not to over mix. Using a cookie scoop, plop your dough onto baking sheets. Slightly flatten cookies,* and bake for 10-12 minutes until slightly brown around the edges.

4. While cookies are cooling, make your coating by placing the chocolate, margarine and peanut butter in a microwave safe bowl. Microwave in increments of 30 seconds, mixing each time to prevent burning. Once cookies have cooled, spoon some of the chocolate mixture onto the top of cookies and smooth over, covering the face of each. Immediately top each with crushed Chex Cereal, and allow to set on a pan or cooling rack. Once all cookies are complete and have set, use a sifter to sprinkle powdered sugar over each cookie.**

5.Keep cookies in the fridge until about 10 minutes before serving. Eat, and indulge!


*I spray the bottom of a glass with nonstick spray, and use that to flatten my cookies

**If you are a powdered sugar fanatic, then you can add a thick layer of powdered sugar. The choice is up to you!
