Morning fellow bakers! With the holiday of Passover approaching I feel like every meal I cook is similar to an episode of Chopped. I’m throwing random ingredients together in preparation to get rid of whatever I have before the holiday! Don’t get me wrong, it’s been fun! Yesterday I was sifting through the baking shelf in my pantry and came across a few ingredients that had to go. I came across a jar of Nutella, which actually shocked me that I had this delicious spread unused in my pantry!
For all of you who haven’t tried Nutella, you are missing out. The hazelnut spread is chocolatey, rich and deliciously addicting. I decided to incorporate Nutella into my baking for the day, and whipped up a batch of Nutella Cookies! These cookies are crisp on the outside and gooey in the inside. The rich Nutella flavor of these cookies pair beautifully with the sea salt sprinkled on top, and elevates these cookies to the next level. Whisk them up, and enjoy!

Total time: 20 minutes
Yields: 1 1/2 dozen cookies
Ingredients
½ cup butter/margarine
¾ cup brown sugar
¼ cup sugar
½ cup nutella
1 egg
1 teaspoon vanilla
1 ⅓ cup flour
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
1 ½ teaspoon instant coffee or espresso powder
¼ cup chocolate chips
Sea salt for sprinkling
Directions
1.Preheat your oven to 375 degrees and line your baking sheets with a silicon baking mat or parchment paper
2. In a stand mixer whip together the sugar and margarine/butter. Add in the Nutella and mix well. Add in egg and vanilla and mix. Scrape down sides of the bowl
3. In a separate bowl whisk together the flour, salt, baking powder, baking soda and coffee. Slowly add into wet ingredients until incorporated. Mix in chocolate chips.
4. Using a cookie scoop, scoop dough onto baking sheets and sprinkle sea salt over each cookie and bake for 9 minutes. Once cookies are baked, allow them to cool on the baking sheet for about 5 minutes and then transfer to a wire cooling rack
