Peach & Blackberry Cobbler

Last week we went fruit picking and came back with enough peaches and berries to feed a large army. After freezing most of it to enjoy later on, I attempted to find exciting ways to use the leftover fruit. Needing to OBVIOUSLY make a dessert, I decided on a cobbler as the best way to showcase the fruits natural deliciousness.


If you asked me, i'd say a cobbler is one of the most comforting desserts. Now I know, that's a big statement! Thinking of desserts to make, I always go for recipes that feel homemade, and provide a bit of comfort. It's a little sticky, and it's a little messy when you cut into it. And to me, that's the best part. When we were serving this cobbler over the weekend, the fruits juices began oozing and dripping deliciously. Apparently everyone around the table had the same reaction because all of a sudden there was a collective "Ohhh!" around the table!


Not only is the dessert delicious, but there’s something very comforting about a cobbler. The diversity of the dish allows everyone to make it their own, which is half the fun. Now, i'm not sure about the rest of you, but the delicious flaky biscuit with the juices from the fresh fruit is just a combination I could eat all day! And topping it off with some bourbon whipped cream? I mean...why not!? I love a bit of boozy whipped cream with my desserts and the flavor gives those who are enjoying the treat a little surprise inside when they take their first bite! Adding the alcohol it to the whipped cream and not directly to the fruit filling also allows guests to control how much they have, or if they want at all. Of course ice cream on top of this would also be fantastic. The options are endless! And that’s why this is the perfect, most comforting dessert.

Total Time: 1 hour

Yields: 6-8 servings


Ingredients

For Filling

About 2 pounds of peaches and blackberries*

½ cup sugar

1 ½ tablespoon cornstarch

2 tablespoon lemon juice

Pinch of salt

1 teaspoon vanilla extract


For Topping

2 ½ cups flour

⅓ cup sugar

1 tablespoon baking powder

1 teaspoon salt

1 stick of cold unsalted butter cut into small pieces

1 egg

½ cup buttermilk


Bourbon Whipped Cream

1 cup heavy cream

2 tablespoon powdered sugar

1 tablespoon bourbon

Pinch of salt


Directions

1.Preheat your oven to 350 and spray your baking dish with nonstick spray.

2. In a large bowl combine your ingredients for your filling, and set aside while you make the topping.

3. To make the topping combine flour, sugar, baking powder and salt in a food processor and pulse a few times to combine. Add in your pieces of butter and pulse until you have pea-size pieces. Whisk your egg into the buttermilk and add to your food processor, pulsing a few times until your dough comes together.

4.Add your fruit filling to your prepared baking dish. After, turn the dough out onto a floured surface and begin to shape into a large rectangle. If your dough is too sticky you can add more flour using a tablespoon until the dough is easier to work with. You can either cut out square shapes of dough and arrange them on your fruit, or use a cookie cutter or round shaped cup. Once you cut your pieces of dough, arrange on top of your prepared fruit. Brush the tops with a bit of buttermilk and sprinkle with some sugar. Place in the oven for 45-55 minutes, until the tops are golden brown.

5. To make your bourbon whipped cream, add one cup of heavy cream to a stand mixer along with your powdered sugar. Begin to whisk until light peaks form. Then add in your bourbon and salt and continue whisking until you have stiff peaks. Serve on top of warm cobbler and enjoy!


*This recipe is diverse and you can use whatever kind of fruit is in season or what appeals to you at the time!
