Peanut Butter Cup Cake



So...how about those Jewish holidays, huh? I see they’re still happening. And one after another in the span of a month I may add. I figured for the last holiday, we should go out with a bang right? Who’s with me?! If you’re in support, then there is cake involved. But not just ANY cake, people! Peanut Butter Cup Cake to be exact!! My family of serious chocolate and peanut butter lovers designated this cake as a favorite, and honestly...I have some smart family members! I mean, who wouldn’t love some rich chocolate cake with peanut butter frosting? I figured since we’re all heading to our kitchens this weekend to prepare for our final holiday, we owe it to ourselves to add this cake to our to-do list. And don't worry, I promise it’ll be your new favorite too!



Prep Time: 10 minutes

Total Time: 1 hour

Yields: 8-10 slices


Ingredients

2 cups sugar

½ cup oil

2 eggs

1 ½ teaspoon vanilla

¾ cup cocoa powder

1 ¾ cups flour

1 ½ teaspoon baking soda

1 ½ teaspoon baking powder

1 teaspoon instant coffee

1 teaspoon salt

1 cups milk

1 cups boiling water


Frosting Ingredients

½ cup softened butter

1 cup peanut butter

3 tablespoons milk

2 cups powdered sugar

Pinch of salt

Chopped peanuts


Directions

1. Preheat your oven to 350 degrees and liberally spray 2 round cake pans with nonstick spray.

2. In a stand mixer, begin to incorporate your flour, sugar, cocoa powder, salt, baking soda, baking powder and instant coffee. Once mixed, add your eggs, vanilla, milk and oil. Once totally incorporated, add in your boiling water. Pour equally into your 2 tins and bake for 30-35 minutes. Once cakes are baked, remove and allow to cool before assembling.

3.While your cakes are cooling, whip together your peanut butter frosting by adding your butter and peanut butter to a stand mixer and beating for about 2 minutes. Gradually mix in the powdered sugar and when it begins to thicken, add some of your milk. Add the rest of your milk and sugar, and a pinch of salt. Continue whipping until it’s light and fluffy.

4. Once cakes have cooled, place the first cake on your desired cake stand. Spread a layer of your frosting on the first cake, and sprinkle with chopped peanuts for texture. Place the second cake on top, and then cover the rest of the cake with the frosting. You can add drizzled chocolate or chopped peanuts for decoration!
