Is it a tart? Is it a pie? Funny you should ask.. it’s actually a galette! A Rustic Apple Galette to be exact. If you guessed a tart, you’re not far off. And if you guessed a pie then you’re on the mark too! This home style treat is a cross between the two desserts with its flaky crust and it’s sweet fruity filling. This galette is not as glamorous or as gorgeous as a classic tart or pie, but honestly, the desserts that look homemade and from the heart are my favorite kind. Everything about this treat screams “apple pie baking in your grandmas kitchen,” and it just brings me back to remembering why I love to bake, and the people who inspired me to. While this galette is baking, you can smell the iconic apple pie scent seeping through your oven. The crust on this treat is flaky and buttery, while the filling is tart and sweet from the apples. One of the reasons this is a new favorite of mine is because it's similar in practicality to my other desserts. It's versatile! You can switch up the filling with whatever fruit is in season such as peaches, berries and more! Slice into this galette as if you are slicing a piece of pie and top it off with some ice cream or whipped cream. OH MAN, you won’t regret it. This galette is perfect to serve friends and family, and will make them feel right at home with your rustic, yet elegant dessert!

Yields: About 8 slices
Ingredients
Crust Ingredients: 1 ½ cups flour ¼ cup sugar ¼ teaspoon salt
1 stick cold cubed butter
¼ cup ice cold water
Filling Ingredients:
3-4 granny smith apples peeled and sliced ¼ Cup brown sugar
1 tablespoon granulated sugar Juice of 1 lemon 1 ½ tablespoon flour Pinch of salt ½ teaspoon cinnamon Pinch of nutmeg
Directions
1. In a large bowl, mix together the flour, sugar and salt for your crust. Once incorporated, using a pastry cutter or 2 forks cut your COLD butter into the flour mixture until it resembles coarse pea-like crumbs. Add in your water to wet all of the flour mixture.* Knead your dough for a minute until all incorporated. Form a ball, then flatten into a disc before wrapping in cling wrap and chilling in the fridge for an hour.
2.While your dough is chilling in the fridge, mix your apples and all of the filling ingredients in a bowl. Allow the mixture to sit and chill until your dough is ready.
3. Preheat your oven to 425 degrees and remove your dough from the fridge. On a floured surface, roll your dough out into a large round shape (about ¼-½ inch thick). Place on a baking sheet lined with parchment paper and fill the middle with your filling. Begin to fold the dough up around the filling, overlapping when necessary. Brush the sides of the dough with egg wash, and sprinkle with sugar**
4. Place the galette in your preheated oven for 30-35 minutes***
*If your dough seems too dry, add about 1 tablespoon more of water
**This step is not required, but will make your galette shine!
***If your crust still needs more time to bake but is getting dark in certain areas, place a piece of tin foil over it to protect from the heat.
