S'more Brownies, Please!

Hey there everyone!


As our week comes to a close and the long holiday weekend approaches, I feel like we owe it to ourselves to celebrate with something sweet. We work hard, right? Well, not only am I excited for the long weekend, my husband and I are also heading down to Philly to visit my family!


In anticipation of this trip, I baked up a batch of S’more Brownies to take with me. I figured that my family and my home friends deserve the best. Let’s be honest, these are the best! If you’re into the whole graham cracker crust, fudgey brownie and ooey gooey marshmallow situation, then I think I see some baking in your future.


Let's get whisking bakers!



Prep time: 40-50 minutes

Yields: 1 dozen squares


Ingredients for crust

10 graham cracker sleeves, crushed

4 tablespoon melted butter


Brownie Ingredients

1 cup of butter, melted

¾ cup cocoa powder

1 ½ cups sugar

4 eggs

2 teaspoon vanilla

1 cup flour

½ teaspoon salt

12 ounces of chocolate chips

1 ½ cups mini marshmallows

Optional: Melted chocolate for drizzle on top


Directions

  1. Preheat oven to 350 degrees and line a baking dish with parchment paper (note: I used an 8x8 tin to get thick brownies)

  2. Mix graham cracker crumbs and melted butter; place in the prepared baking dish and bake for 10 minutes, or until golden brown

  3. Begin to the brownie batter by melting the butter in a microwavable safe bowl.

  4. Stir in cocoa powder, then sugar. Add in the eggs one at a time, mixing thoroughly between each.

  5. Stir in the vanilla, flour, and salt.

  6. Once fully combined, stir in the chocolate chips.

  7. Pour brownie batter over the cooled graham cracker crust, and bake for 20-25 minutes, or until a toothpick comes out clean. If you are using a larger tin, you can bake for a less time.

  8. Once brownies are baked, cover the surface with the mini marshmallows and place under the broiler until golden brown.*

  9. Let the brownies cool before slicing in and devouring this entire pan!

*When brownies are under the broiler you MUST watch them carefully! The broiler is a powerful monster and can end up burning your beautiful marshmallows! If you have a kitchen torch, that is also a great alternative!
