Stout Brownies



Check out these fantastic Stout Brownies perfect for Fathers Day this Sunday! If you have a special male figure in your life that has supported you, listened to you and been there through the good and bad, then this recipe is perfect for you! Bake it up to give as a gift, or to honor these people's past and present impact on your lives. These brownies have a crazy depth and richness all thanks to that stout beer. I was excited to pair the stout flavors with something chocolatey to amp up the flavor profile and create a decadent treat. I topped the brownies off with pretzels to add some salty goodness and texture to this ooey gooey brownie.


I’m thankful to be close with my own father (Daddy’s Girl Alert), and am thankful for the other father figures in my life such as my grandfathers, who selflessly put us before their own needs. These guys are powerful forces of nature, and display their love, toughness, commitment and support for their loved ones. They’re basically some of the best guys around, and there’s nothing wrong with showing a bit of appreciation! Ties, mugs and gift cards are great to give and all, but let’s be honest; Brownies are where it’s at!



Prep Time: 30 minutes

Total Time: 1 hour

Yields: 16-20 brownies


Brownie Ingredients

1 cup butter/margarine, melted

1 ½ cups sugar

3 eggs

1 teaspoon vanilla

½ teaspoon espresso powder

1 cup flour

½ teaspoon salt

¾ cup cocoa powder

1 ½ bottles of Guinness beer


Stout Frosting

½ cup margarine/butter

Leftover reduced beer

¼ teaspoon salt

Splash of vanilla

2 cups confectioners sugar

1 teaspoon espresso powder

Crushed Pretzels


Directions

1.Preheat your oven to 350 degrees and line a baking pan with parchment paper. In a small saucepan on the stove add your beer and allow to reduce for about 10-15 minutes. Once finished, remove from heat and allow it to cool before using in your recipe.

2. In a microwave safe bowl, melt your margarine/butter. Add to a stand mixer along with sugar and mix until incorporated. Add in your vanilla and eggs one-by-one making sure all is incorporated.

3. In a separate bowl mix together your flour, espresso powder, salt and cocoa powder. Slowly begin to incorporate into your brownie batter, followed by ½ cup of your reduced, cooled beer. Pour into prepared pan and bake for 20-25 minutes.

4.While brownies are baking, begin your stout frosting by whipping your margarine/butter in a stand mixer with your whisk attachment. Slowly begin to incorporate your powdered sugar one cup at a time. Once the frosting starts to come together add in your vanilla, salt and espresso powder. Add in the leftover reduced beer, and continue whipping the frosting until light and fluffy.

5.Once brownies have cooled, top them with your stout frosting, and add a sprinkle of crushed pretzels on top. Allow the brownies to set in the fridge before cutting them into squares. Slice, and enjoy!
