Strawberry Shortcake



It’s strawberry season, and i’m not afraid to use them! Now that we are in full-blown summer mode, there’s a whole bunch of fruit that’s just waiting to be used in my baking! I made this Strawberry Shortcake for a friends house this weekend and it was DELISH! This cake was the perfect treat for the recent warm weather that’s finally moved in. I always like a thick piece of cake for my Strawberry Shortcake and a light whipped cream topping to balance the heaviness. The strawberries were beyond refreshing, and the perfect dessert to sit back and enjoy with friends and family. The Strawberry Shortcake is iconic and always puts a smile on people’s faces. Bake this up for 4th of July, graduation parties or to share with a few friends like I did!



Ingredients

1 cup butter

2 cup sugar

4 egg

2 teaspoon vanilla

1 ½ cup milk

3 cups flour

3 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon salt


Whipped Cream

1 pint heavy cream

1 teaspoon sugar

1 pint strawberries; thinly sliced


Directions

1.Preheat your oven to 350 degrees and liberally spray 2 round baking pans with baking spray.

2. In stand mixer add your butter and begin to beat until fluffy. Add in your sugar, followed by your eggs and vanilla. Scrape down the sides of the bowl to ensure everything is mixed together.

3. In a separate bowl mix together your flour, baking powder, baking soda and salt. Slowly begin to add the dry mixture into your batter, followed by the milk. Make sure the batter is all mixed together before dividing into the prepared baking pans. Place in the oven for 18-20 minutes, checking with a toothpick for doneness.

4.While cakes are cooling, add your heavy cream to a stand mixer along with the whisk attachment. Begin on the lowest setting to create air bubbles, before switching to your high setting to begin the whipping process. Once it seems that the heavy cream is beginning to grow in size, add in your sugar and continue whipping until stiff peaks are created.

5. To assemble cakes, place your first layer on a cake stand, followed by a generous layer of whipped cream on top. Begin to layer your sliced strawberries on the whipped cream, followed by another small amount of whipped cream on top. Place the second layer of cake, and add a final thick layer of whipped cream for topping. Add strawberries in any decoration pattern you like. Eat, and enjoy!
