Vanilla Bourbon Berry Pie



Oh my word. It’s pie time people! July 4th is approaching, and what better way to celebrate than a dessert that is LITERALLY red, white and blue?! I love everything about this holiday, and since I was a kid i’d plan out the day methodologically. My day HAS to consist of some type of BBQ, a water related activity whether it’s at the beach or pool, and of course, fireworks! Fireworks has to be my favorite part of the day. Something about gathering with your loved ones to admire the beautiful popping lights just forces you take a step back and be thankful for all the beauty we get to experience together. It’s a simple and traditional activity that I just can’t miss. It also doesn’t hurt that my birthday is the next day, and fireworks feel like the kickoff!


To me, a classic berry pie just screams “All American goodness.” Similar to those fireworks that I love, this pie is an explosion of major flavor. With the pop of the berries and a sweet bourbon surprise inside, you’ll be feeling extra patriotic this year! Serve this treat slightly warm or room temperature, and top it off with your favorite ice cream to cool things down. Pie screams homemade to me, and there’s no better type of treat to enjoy while kicking back with fireworks and making memories with your loved ones!



Prep Time: 20 minutes

Total Time: 2 hours

Yields: 6-8 slices


Ingredients

2 premade pie crust or your favorite recipe

1 pound fresh sliced strawberries

1 pound fresh blueberries

3 tablespoon cornstarch

¾ cup brown sugar

¼ cup bourbon*

1 tablespoon vanilla extract

Zest from 1 lemon

Pinch of salt

1 egg; beaten

Granulated sugar for sprinkling


Directions

1.Begin by greasing a pie plate and placing your chilled pie crust in your plate.

2. In a separate bowl, mix together berries, cornstarch, sugar, vanilla, zest and salt, and spoon into prepared pie crust.

3. With your second pie crust, cut or shape it to whatever pattern you like such as a lattice, braids, polka dots etc. Place on top of your fruit, and then chill the pie in the fridge for at least 30 minutes.

4. While the pie is chilling, preheat your oven to 425 degrees. Once ready, beat one egg and brush the top of the pie for some shine, and add a sprinkling of sugar. Place pie on a baking sheet and bake in the oven for 30 minutes. Reduce the temperature to 350 degrees and then bake the pie for 45-50 minutes.**

5. Once pie is finished baking, allow it to rest on the counter for at least 4 hours before slicing. Serve with whipped cream or vanilla ice cream!


*If you don’t want to add bourbon to this recipe, you can add another non-alcoholic liquid such as apple or orange juice.

**If your crust is browning too quickly, tent it with tin foil to avoid the crust getting burnt
